Love them or hate them, Brussels sprouts have become a staple of the traditional Christmas meal. However, even the oldest traditions can do with a modern update and this year Destiny Foods brings you a Brussels sprouts recipe that will transform the ordinary vegetable into a festive feature on your Christmas menu.
Creamed Brussels sprouts with bacons, almonds and masala.
- 500 g Brussels sprouts, outer leaves removed, halved through the root
- 125 g smoked, streaky bacon, chopped
- Olive Oil
- 100 ml Masala
- 50 g Flaked almonds
- 3 tbsp Double cream
First fill a bowl with cold water and leave ready to hand. Following this boil sprouts in a pan of salted water, turn down the heat and simmer for 2-3 minutes. Then drain the sprouts and add them to the bowl of cold water and leave for 5 minutes.
Next fry the bacon on a medium heat and when crisp add the masala and reduce by half. Take off the heat and leave to cool. Alongside this, toast the almonds in a dry pan until golden. Put the bacon back on a medium heat and when it begins to sizzle add the sprouts and cream, bringing to a gentle boil. Season with salt and pepper and simmer for 3 minutes. Finally scatter the toasted almonds over the sprouts and serve.
