This week Britain celebrated National Chocolate Cake Day on 27th January, so here at Destiny Foods we have decided to commemorate the special occasion with a simple recipe for an indulgent chocolate fudge cake.
For this cake you will need:
200g plain chocolate, broken into chunks
200g light brown muscovado sugar
100ml soured cream
2 eggs, beaten
200g self-raising flour
5 tbsp cocoa powder
Line a 22x22cm baking tray with baking parchment and pre-heat the oven to 140c or gas mark 5.
Add the chocolate, butter and sugar to a large pan with 100ml of hot water and gently melt the ingredients together until you get a smooth consistency. Following this, stir in the sour cream, crack in the eggs and add to the melted chocolate mixture.
Finally, whisk in the flour and cocoa to until all lumps are removed. Carefully pour the mixture into the baking tray and bake for 50-55 minutes or until the mixture has reached a spongy consistency.
Once your cake has sufficiently cooled it’s now time to decorate; experiment with hundreds of thousands or lather with a thick butter cream topping.
