Mother’s Day is looming, and whilst many will already have bought a present or a card, there are always ways to make sure your mother’s day is extra special.
It’s no secret that most mums love chocolate, so to help you mark the occasion, Destiny Foods has put together a recipe for chocolate truffles that is bound to make your mum’s day extra special.
280g good-quality dark chocolate, 70% cocoa solids
284ml pot double cream
50g unsalted butter
50g caster sugar
2tsp cocoa powder
2tsp icing sugar
Chop the chocolate into fine pieces and place in a mixing bowl with broken up butter.
In a saucepan, place the double cream and caster sugar and stir until the sugar has dissolved. Bring the mixture to the boil and pour over the chocolate and butter until the mixture has melted.
Whisk the mixture until it is shiny and thick. If you want to flavour your truffles, add the flavourings at this point. Place the mixture in the freezer and leave to chill for 2-4 hours.
In a separate bowl, mix the cocoa powder and icing sugar. Remove the truffle mixture from the freezer and roll into balls in the palm of your hands. Coat lightly in powder and place on greaseproof paper to set.
Leave the finished product to chill in the fridge in an air tight container for 3 days or freeze for up to a month.
